Opened in 1941 inside The Beverly Hills Hotel, the Polo Lounge has outlasted every restaurant that tried to replace it as the room where Los Angeles does business over breakfast. Forest-green walls, circular leather banquettes and black-and-white polo photographs set the interior; the patio runs out under the bougainvillea, and live music plays through the day. Dishes have stayed put for decades — the Dutch apple pancake, the tortilla soup — because the room is not in the business of reinvention.
